The Photographers and The Zucchini Bread

This morning I went out to our garden, like I do every morning. I first checked out the tomatoes, there were 2 ready, then the squash, there were 3 ready, then to the zucchini... HOLY MOLEY!! Out of nowhere I had a zucchini that was a foot long that could easily double as a steam roller! I check our garden every day, I don't know where this zucczilla came from! So I promised the kids we would make chocolate chip zucchini bread(recipe below). So we all started off making it, and then somehow it was just me, imagine that. I was happily making the bread and the kids were being quiet, (WARNING! WARNING! WARNING!) I was listening to one of my favorite radio shows (Wait Wait Don't Tell Me on NPR), and then FLASH! The kids were being so quiet because they got into my purse, pulled out the camera and they were happily playing photographer. Here are my favorite pictures that they took...

CJ's back. Notice two things about this picture. One, she was wearing a robe, not anymore! Two, look at how the end of her braid curl almost just like the oceanspray cranberry juice logo. Isn't that funny? Up close and personal with Brian. Now I want to point out that they took many pictures, but the fact that they were quiet and that there are pictures of both of them mean that they were willingly sharing!! I am so proud of that! And finally the picture that got them busted. Those are CJ's feet in the upper left corner, she was eating chocolate chips and Brian came in and took a picture of the floor and I of course saw the flash. That ended all their photography fun.

Chocolate Chip Zucchini Bread
3 eggs
1 C. Oil
1 1/2 C. Sugar
1 t. Vanilla
1 t. Salt
1 t. Baking Soda
1 t. Cinnamon
1/4 t. Baking Powder
2 C. Grated Zucchini
3 C. Flour
3/4 C. Chocolate Chips

Preheat oven to325 degrees. Beat eggs until fluffy. Mix in oil and sugar, add vanilla, salt, baking soda, cinnamon, baking powder, mix until well blended. Add zucchini and flour, mix until well blended. Use a wooded spoon to mix in chocolate chips. Bake for 30-45 minutes.

All that came from one zucchini! What am I going to do with all this zucchini bread?
